Shortbread Thumbprint Cookies


2/3 cup sugar
1 cup butter
1 tsp. vanilla extract
2 cup all-purpose flour
1/2 - 1 cup Flaming Joe's Strawberry Jalapeņo Jam or
Tropical Fruit & Habanero Marmalade
1/2 - 1 cup confectioners sugar for sprinkling

Heat oven to 350. Combine sugar, butter and vanilla extract
in large bowl. Beat at med. speed, scraping bowl often,
until creamy 1-2 minutes. Reduce speed to low; add flour.
Continue beating until well mixed 1-2 minutes.

Shape dough into 1 inch balls and place 2 inches apart on
cookie sheets. With thumb make indentation in center of
each cookie. [Edges may crack slightly.] Fill each
indentation with about 1/4 - 1/2 tsp. jam or marmalade.
Bake about 12- 14 minutes until edges are lightly browned.
Let stand 1 minute; remove from cookie sheet.
Once cookies are cooled, sprinkle with confectioners sugar.
Makes about 3 1/2 dozen cookies.

Storage directions:
store in airtight containers up to 1 week or freeze up to 3 months.
Tip: If cookies are spreading too much, chill dough 1 hour or stir in 1 or 2 tbsp. flour.

Flaming Joe's Caribbean Style Jerk Sauce (Hot or Mild)
Start with a ratio of 3 parts Jam to 2 parts and adjust to your taste.
Put meatballs and sauce in a crockpot and you have a great new twist on a classic appetizer.
